Keto Buns

Ingredients
- 2 tsp active dry yeast
- 2 tsp honey
- 120 ml water roughly 40°C
- 1 3/4 cups (168g) blanched almond flour
- 3/4 cup (80g) golden flaxseed meal finely ground
- 1/4 cup (15g) whey protein
- 2 tbsp (18g) psyllium husk finely ground
- 2 tsp xanthan gum (alternatively 4 tsp ground flaxseed)
- 2 tsp baking powder
- 1 tsp salt
- 1/4 tsp cream of tartar
- 1/4 tsp ground ginger
- 1 egg at room temperature
- 3 egg whites
- 1/4 cup (56g) butter
- 1 tbsp apple cider vinegar
- 1/4 cup (58g) sour cream or (coconut cream + 2 tsp apple cider vinegar)
- 1 leftover egg yolk for egg wash
- 1 tbsp milk
- Few sesame seeds for sprinkling
Method
- Add honey, yeast and warm water to a container. Leave to rest for about 10
minutes until frothy and smelling like a brewery.
- Mix flours, flax, gluten powder, psyllium, xanthan gum, baking, salt, cream
of tartar and ginger to a bowl and mix.
