Keto Buns

Ingredients

  • 2 tsp active dry yeast
  • 2 tsp honey
  • 120 ml water roughly 40°C
  • 1 3/4 cups (168g) blanched almond flour
  • 3/4 cup (80g) golden flaxseed meal finely ground
  • 1/4 cup (15g) whey protein
  • 2 tbsp (18g) psyllium husk finely ground
  • 2 tsp xanthan gum (alternatively 4 tsp ground flaxseed)
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/4 tsp cream of tartar
  • 1/4 tsp ground ginger
  • 1 egg at room temperature
  • 3 egg whites
  • 1/4 cup (56g) butter
  • 1 tbsp apple cider vinegar
  • 1/4 cup (58g) sour cream or (coconut cream + 2 tsp apple cider vinegar)
  • 1 leftover egg yolk for egg wash
  • 1 tbsp milk
  • Few sesame seeds for sprinkling

Method

  1. Add honey, yeast and warm water to a container. Leave to rest for about 10 minutes until frothy and smelling like a brewery.
  2. Mix flours, flax, gluten powder, psyllium, xanthan gum, baking, salt, cream of tartar and ginger to a bowl and mix.
