Low Card Bread Loaf

Ingredients

  • 1 1/4 cup wheat gluten
  • 1/2 cup oat fiber
  • 2/3 cup milled flaxseed
  • 2 tbsp honey
  • Packet of dry active yeast (usually ~3 tsp)
  • 1 tsp sea salt
  • 1/4 tsp xantham gum
  • 1 cup luke warm water
  • 3 large eggs (2 for dough, 1 for egg wash)
  • 2 tbsp butter
  • Sunflower, pumpkin, sesame seeds for sprinkle

Method

  1. Put the yeast, water (must be approximately 38°C) and honey into a jug, stir and leave covered for 10 minutes
  2. Put the wheat gluten, oat fiber, flaxseed, salt and xantham gum into a bowl and mix together
  3. Add the eggs and butter and begin mixing well
  4. Keep mixing until the dough becomes consistent
  5. Knead the dough for 2-3 minutes and shape to form a similar form to the baking tray
  6. Plop into the tray, cover and leave for 2 hours until dough has expanded
  7. Preheat the oven to 180°C
  8. Apply 1 egg egg wash to the loaf and sprinkle with seeds
  9. Bake for 30 minutes or until bread has risen but keep an eye on things here
