Use a BBQ grill or hob griddle for frying the chicken (looks like grill, tastes like grill).

Ingredients
- 2 80-90g slices from a ciabatta loaf
- 1 handful rocket leaves
- 1/2 medium tomato sliced
Chicken Marinade
- 2 chicken breasts - butterflied
- 1 tsp Worcestershire sauce
- 1 tbsp fresh lemon juice
- 1 tbsp oil of choice
- 1 tbsp parsley
- 1 garlic clove, minced
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp salt
- 1/2 tsp black pepper
Mayo
Below is a quick version.
- 2 tbsp mayonnaise
- 1/2 tsp mustard
- 1 tsp basil
A richer alternative to this would be to make a basic aioli and add mustard and basil to taste.
Method
- Marinade chicken and herbs at least 1 hour in advance
- Slice and lightly salt sliced the tomatoes
- Heat up a drop of neutral oil on high heat if using a griddle pan
- Fry chicken for 3-4 minutes on first side
- Cook for another 4-5 minutes, remove chicken, leave to rest for a few minutes
- Warm up the bread in a toaster or the residual heat from pan
- Spread mayo mixture on each flat
- Place the rocket, then tomato on side
- Then place the chicken on top, press with the other side
- Eat!
