Soy & Ginger Salmon
Grilled salmon with a soy and ginger marinade

Ingredients
Marinade
- 2 tbsp miso paste
- 1 tbsp ginger
- 1 tbsp sake
- 1 tbsp mirin
- 1 tbsp light soy sauce
- 1 tbsp sugar / sweetener
Method
- Grate ginger into a bowl (if using whole ginger thumb)
- Add all other marinade ingredients to the bowl
- Mix all ingredients together
- Add salmon into the mixture, evenly coating all chunks
- Leave to rest in fridge for an hour
- Place the salmon chunks on a baking tray, reserving some of the marinade
- Grill at high for 5 minutes
- Brush the par-grilled salmon with the remaining marinade
- Return to grill for another 3-5 minutes, ensuring the salmon doesn't blacken
too much
