Soy & Ginger Salmon

Grilled salmon with a soy and ginger marinade

Ingredients

  • 300g salmon (chunks)

Marinade

  • 2 tbsp miso paste
  • 1 tbsp ginger
  • 1 tbsp sake
  • 1 tbsp mirin
  • 1 tbsp light soy sauce
  • 1 tbsp sugar / sweetener

Method

  1. Grate ginger into a bowl (if using whole ginger thumb)
  2. Add all other marinade ingredients to the bowl
  3. Mix all ingredients together
  4. Add salmon into the mixture, evenly coating all chunks
  5. Leave to rest in fridge for an hour
  6. Place the salmon chunks on a baking tray, reserving some of the marinade
  7. Grill at high for 5 minutes
  8. Brush the par-grilled salmon with the remaining marinade
  9. Return to grill for another 3-5 minutes, ensuring the salmon doesn't blacken too much
  10. Enjoy!
