Indian Chicken Wing Marinade

Chicken wing rub from selection of eastern spices

Ingredients

  • 800g-1kg pack of wings
  • 4 tsp ground coriander
  • 4 tsp ground cumin
  • 1 tsp ground cardamom
  • 1 chili powder (optional, leave out if you want milder wings)
  • 1 black pepper
  • 1 ground cloves
  • 2 tbsp sunflower oil
  • 2 tbsp lemon juice
  • 3 tbsp water
  • 1 1/2 tsp salt

Method

  1. Best to use a grinder or mortar & pestle to grind the cloves first off
  2. Mix all the finely ground dry ingredients to a bowl
  3. Dry roast powders on medium heat for a minute or so until fragrant
  4. Once fragrant, reduce heat to low and mix in salt, water and oil, stir fry for a minute
  5. Then, lather the wings with the spice mix and leave the marinade to rest for a few hours. Overnight yields best results
  6. Preheat oven to 180°C
  7. Once ready, pop the chicken onto a tray and cook for 30-35 minutes
