Ingredients
- 1 large whole chicken
Marinade
- 1 red onion
- 2 red bell peppers
- 5 cloves of garlic
- 1 red chili
- Juice of 1 lemon
- 1 tbsp smoked paprika
- 10ml red wine vinegar
- 1 1/5 tbsp (25ml) sunflower oil
Method
- Blend all marinade ingredients into a paste
- Slather on the chicken and marinade for 1 hour
- Preheat oven to 180°C
- Cook the bird for the suggested cooking times (1-2 hours typically)
