Garlic Parmesan Sauce

Ingredients

  • 1/4 (60ml) cup butter
  • 5 minced garlic cloves
  • 2 tbsp flour OR 1/3 tsp xantham gum
  • 1 cup (280ml) beef stock
  • 1 tsp basil
  • 1 tsp oregano
  • 1/2 cup (120ml) double cream
  • 1/2 cup (42g) grated parmesan
  • 2 tbsp cream cheese

Method

  1. Melt butter in pan over medium heat, ensure it doesn't brown
  2. Add garlic and cook softly until fragrant for about 2 minutes
  3. Whisk in thickening agent (flour or xanthan gum)
  4. Gradually whisk in stock and dried seasonings, cook for a minute to incorporate
  5. Pour in cream, parmesan and cream cheese and cook until it thickens a bit
  6. Season with salt and pepper to taste
