Salsa Roja
Salsa to add a kick to burritos, bowls or just splattered over anything really!

- ~1 kg tomatoes (6-7 medium sized)
- 2 or 3 red chili peppers
- 1 small onion
- 3 garlic cloves (or 1 single clove)
- 4 tbsp chopped coriander
- Juice of 1/2 lime freshly squeezed
- 1 tbsp olive oil
- Pinch of salt, pinch of pepper
- 1/4 tsp cumin
- 1/4 tsp oregano
Method
- Add tomatoes, onions, chili, garlic, coriander and lime to a food processor
- Blitz until smooth
- In a pot, heat olive oil
- Add the blended salsa, then remaining seasonings
- Bring to a boil, reduce heat and simmer for 20 minutes
- Remove from heat
- Enjoy!
