Salsa Roja

Salsa to add a kick to burritos, bowls or just splattered over anything really!

Ingredients

  • ~1 kg tomatoes (6-7 medium sized)
  • 2 or 3 red chili peppers
  • 1 small onion
  • 3 garlic cloves (or 1 single clove)
  • 4 tbsp chopped coriander
  • Juice of 1/2 lime freshly squeezed
  • 1 tbsp olive oil
  • Pinch of salt, pinch of pepper
  • 1/4 tsp cumin
  • 1/4 tsp oregano

Method

  1. Add tomatoes, onions, chili, garlic, coriander and lime to a food processor
  2. Blitz until smooth
  3. In a pot, heat olive oil
  4. Add the blended salsa, then remaining seasonings
  5. Bring to a boil, reduce heat and simmer for 20 minutes
  6. Remove from heat
  7. Enjoy!
