Ingredients
- 200g (2 cups) basmati rice
- 1 bay leaf
- 1/2 cinnamon stick
- 3 green cardamoms
- 4 cloves
- 1/2 tsp saffron
- 2 tbsp ghee
- 400ml water
- splash of red and green food colouring
Method
- Rinse the rice through cold water well (if using a bath, change water as needed) and then drain
- Add the ghee to a saucepan over medium heat
- Add the spices and gently toast them until you get an aromatic lift
- Add the rice to the pain, stir well to ensure rice is well coated
- Add the water, bring to the boil. Once boiling, reduce heat to low and put the lid on (do not remove the lid for any reason)
- Let simmer for about 9-11 minutes
- At the left of the pan add green food colouring, add the right add red
- Remove from heat and let stand for 5 minutes
- Fluff the rice with a fork and pick out the spices
- Serve and enjoy
