Chickpea Almond Protein Bar

- 1 baking dish
- Food processor/mixer
Ingredients
- 1 can of chickpeas, drained and rinsed
- 6 large dates
- 1/4 cup (60g) almond butter
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 3 scoops (~20-30g per scoop) of protein powder
- 2 tbsp chia seeds
- 1/4 cup sunflower seeds
- (Optional) 1/3 cup (~60g) raisins/dried fruit
Method
- Put chickpeas, dates, almond, vanilla, cinnamon and salt in a food processor
- Process this mix until smooth, scraping container edges as needed
- Add in protein powder, chia and sunflower seeds. Process until smooth
- With wet hands, press the mixture into the baking dish
- Freeze for an hour
- Cut the mass in to 10 slices and store in the fridge
