Chickpeanut Bars

Delicious energy bars, chickpea and peanut based, perfect for snaking

Equipment

  • 1 baking dish
  • Food processor/mixer

Ingredients

Serves 6-8

Base

  • 1 can of chickpeas (typically 15oz/400g) drained
  • 1/2 cup (120g) peanut butter
  • 1/4 cup (50g) of sugar or alternative sweetener
  • 2 egg yolks
  • 1 tbsp cream cheese
  • 1 tsp salt
  • 1 tbsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 tsp allspice
  • 1/2 tsp baking powder

Mixins

  • 1/2 cup (65g) walnuts
  • 1/2 cup dark / white / milk chocolate chips
  • 1/4 cup other seeds or nuts as desired

Method

  1. Preheat oven to 180°C
  2. Combine all base ingredients to a mixer, blitz well
  3. Combine dry mixins into the base mixture
  4. Transfer the mixture into a baking dish
  5. Bake for 22 minutes
  6. Remove from oven, let cool for 30 minutes
  7. Slice into 6-8 even pieces
