Tuscan Chicken
Rich, tuscan chicken

Ingredients
- 1/4 tsp xantham gum
- 2 tbsp olive oil
- 4 breasts of chicken
- 2 tsp oregano
- 1/2 tsp smoked paprika
- 3 tbsp butter
- 4 garlic cloves
- Handful of sun dried tomatoes (use normal tomatoes but be sure to salt before)
- Handful (100g) spinach
- 200ml chicken stock
- 1/2 cup double cream
- 1/4 cup grated parmesan
Method
- Combine the paprika and oregano in a bowl, then add chicken breasts, coating
evenly
- Heat oil in a pan on med-high heat and cook chicken skin side down for 5
minutes
- Turn chicken over and cook on other side for 4-5 minutes, until golden brown
- Remove chicken and set aside
- Add garlic and tomatoes to pan, cook until aromas are released
- Add chicken stock to the pan, return the chicken, simmer for 5 minutes
- Add the spinach, cook until it has wilted
- Then add the double cream, half the parmesan, cooking through
- Serve over whatever side, with the rest of the grated parmesan as garnish
