Mexican Pollo

Chicken for burritos, bowls, fajitas. Inspired by Boojum.

Ingredients

Following ingredients are all loosely based on 500g chicken. If using more chicken, add more seasonings.

  • 500g chicken thighs (bone removed)
  • 2 tbsp oil of choice
  • 2 garlic cloves (minced)
  • 2 tsp cumin
  • 1 tsp coriander
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tbsp paprika
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp black pepper
  • 1/2 to 1 tsp of salt (as preferred)

Method

Generally easier to leave the thighs whole as it makes them easier to sear

  1. Mix all ingredients together, let marinade for a few hours (or at least 1 or 2)
  2. Sear the thighs on a medium-high heat pan, turning after a few minutes
  3. Keep cooking until the thighs are cooked through

Notes

My usual favourite burrito/bowl fillings are black beans, sautéed peppers and onions, mexican rice with a generous drizzle of salsa roja, sour cream, cheese and of course guacamole
