Ingredients
Following ingredients are all loosely based on 500g chicken. If using more chicken, add more seasonings.
- 500g chicken thighs (bone removed)
- 2 tbsp oil of choice
- 2 garlic cloves (minced)
- 2 tsp cumin
- 1 tsp coriander
- 1 tsp onion powder
- 1 tsp oregano
- 1 tbsp paprika
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1/2 tsp black pepper
- 1/2 to 1 tsp of salt (as preferred)
Method
Generally easier to leave the thighs whole as it makes them easier to sear
- Mix all ingredients together, let marinade for a few hours (or at least 1 or 2)
- Sear the thighs on a medium-high heat pan, turning after a few minutes
- Keep cooking until the thighs are cooked through

My usual favourite burrito/bowl fillings are black beans, sautéed peppers and onions, mexican rice with a generous drizzle of salsa roja, sour cream, cheese and of course guacamole
