Ingredients
Curry
- 3 tbsp neutral oil (sunflower)
- 1 large onion chopped
- 4 garlic cloves
- 1 tbsp ginger paste
- 2 tbsp ground coriander
- 1/2 tbsp turmeric
- 1/2 tbsp cumin
- 1/2 tsp chili powder
- 1 pack of chopped tomatoes or passata
- 1 can (400g) of chickpeas cooked per instruction
- 120ml chicken stock
- 100g fresh spinach chopped
- 1/2 tsp salt
- 1 tsp sugar
- 1 tsp garam masala
- 1 tbsp lemon juice
- 1/2 cup (100ml) coconut milk
- Handful of fresh coriander
Garnish
- 1 green chili
- 2 tbsp mint yoghurt
